  • The 2 Things You Need for a Perfectly Smoked Turkey

    No More Dry Turkey Meat

    Are you the Thanksgiving chef in your home? Tired of tweaking your grandmother’s old recipe and ending up with a dry bird each year? Turkey is a difficult meat to perfect, and when we really only focus on it one day a year, you might not get much practice with it. We want this Thanksgiving to be the one that changes how you do turkey. Read on to find out exactly what you need to smoke a turkey that your guests won’t soon forget.

    How To

    The two keys to a perfect turkey are a Turkey Cannon Infusion Roaster and SmokePro pellet grill from Camp Chef. These products alone will transform your turkey into a tender, flavorful masterpiece. The Turkey Cannon infuses the meat with moisture from the inside out and cuts your cooking time way down. You can cook a 12 lb. turkey in just two hours! The SmokePro pellet grill will also streamline the process; your bird will come out cooked to perfection with a savory, wood-fired flavor. The digital temperature control will keep your grill at the correct heat, so all you have to do is set it and let it. We’ll explain how that’s done:

    Fire up your pellet grill to 350° F and let it heat up for a few minutes. We recommend using Camp Chef Premium Hardwood Pellets because they burn hotter and cleaner than any other wood pellet. You can choose the flavor you’d like, but Smokehouse Hickory BBQ or Competition Blend would probably be best.

    Place the cannon inside a large roasting pan and fill it with 1 cup of chicken broth, or any other liquid you want (juice, wine, beer, soda). You want to fill the cannon to just below the first hole.

    Prep the turkey be removing the giblets and rinsing inside and out. Slide the bird onto the cannon, breast side up, and sprinkle with seasoning. You can use your own favorite recipe for the outside seasoning, or copy us and use a mixture of olive oil, sea salt, Italian seasoning, ground pepper, paprika, garlic powder, and rosemary. Be sure to coat the entire turkey; you can even spread it under the skin for some added flavor.

    Place the roasting pan (with the turkey on the cannon) inside your pellet grill, and slide the meat probe into the thickest part of the breast, being careful not to touch the bone.

    Set the pellet smoker Hi Smoke, and let the bird cook for 30 minutes. Afterward, turn the temperature to 275-400° F.

    Cook for 90 more minutes or until the meat probe reads 170° F.

    Transfer the bird to a platter or carving board and slice. The juices in the pan can be used for delicious gravy.

You can fit tons of seeds inside a pellet grill, and it keeps the whole mess of carving, gutting, and roasting outside instead of on your kitchen floor. We have both sweet and savory seed recipes for you to try on your wood smoker this weekend.

    Cinnamon Sugar Pumpkin Seeds

    You'll need...

    • -1 & 1/2 cups pumpkin seeds
    • -3 T salted butter
    • -1 t cinnamon
    • -2 T white sugar

      Heat your pellet grill to 300° F. Melt the butter, add cinnamon and sugar, and pour into a bag. Pour your pumpkin seeds into the bag with the mixture then toss to coat each seed. Lay them out on a greased baking sheet, and bake for about 40 minutes. Keep an eye on your pumpkin seeds while they bake to be sure you don't overcook them.

    Kickin' BBQ Pumpkin Seeds

    You'll need...

      Heat your pellet grill to 300° F. Melt the butter and coat the seeds in it. Lay the seeds on a lightly greased baking sheet and sprinkle the rub on top. Move the seeds around the sheet to coat them completely. Bake for about 40 minutes. Keep an eye on your pumpkin seeds while they bake to be sure you don't overcook them.

    Duck & Pickled Onion Tacos

    The rub in this recipe, made from Camp Chef's Mango Chipotle seasoning, is packed with powerful flavor, while the pickled red onions add a nice tang to the taco. It might sound like an odd combination, but your tastebuds won't be complaining.


    • -2-4 duck breasts
    • -Corn tortillas
    • -1/4 cup Camp Chef Mango Chipotle Rub
    • -1 T fresh coffee grounds
    • -1 T tequila
    • -1 lime (juiced)
    • -1 T fresh cilantro
    • -1 red onion, thinly sliced
    • -1 cup water
    • -1/3 cup apple cider vinegar
    • -Salt
    • -Jalapeños (optional)
    • -Queso blanco (optional)

      Duck tacos with jalapeno and pickled red onions

    In a small bowl, mix all ingredients together to make a paste. Score the skin on each duck breast every ½ inch and add to paste. Be sure to completely cover each breast. Let marinade for 30-45 minutes.

    Add red onion, water, apple cider vinegar and salt to 10- or 12-inch cast iron skillet. Simmer over low heat for 20-30 minutes.

    Grill duck breasts skin side down over high heat. Grill for 1 to 2 minutes on each side or until medium rare. Be sure not to overcook.

    When done, thinly slice breasts, place on corn tortilla, and top with onions. Add jalapeños and queso blanco if desired.

    Herb Roasted Pheasant Breasts

    Fresh herbs go great on pheasant, especially fresh pheasant from the hunt. You can count on a tender, moist bird from this recipe with almost no effort on your part. Just season and cook.   Ingredients

    • -4-6 pheasant breasts
    • -2 minced garlic cloves
    • -1 cup fresh herbs (basil, sage, rosemary, oregano, etc.)
    • -1/2 cup cooked bacon, diced
    • -1 whole lemon, diced, including skin
    • -Salt
    • -Pepper

      Herb roasted pheasant

    Preheat pellet grill to 400°.

    In a small bowl combine garlic, herbs, bacon and lemon. Rub each pheasant breast with mixture and place in a lightly oiled Square Dutch Oven.

    Bake in pellet grill with lid off for 15 to 20 minutes or until breasts are just cooked. Time and temperature will vary depending size of pheasant breast.

    Serve with wild rice or potatoes and mix of veggies.

  • 4 Steps to an Awesome Tailgate Party

    You don't have to be a seasoned tailgater of twenty years to put on a successful tailgate party. In fact, you only need to follow the basics for the fun, delicious tailgating experience you're hoping for. The pros might tell you about all the bells and whistles you "must" have, from tricked-out trucks to portable sound systems. But if you're just starting out, you only need these four steps:

    1.Pack Warm

    During the first part of the season, the weather may be cool and comfortable. But give it a month or so, and you'll find yourself shivering in your team jersey. The key to tailgating at every game is being prepared for the weather. That means packing coats and beanies, serving hot drinks and soup, and investing in a canopy to stay dry. You may also want a portable propane fire pit for an added bit of warmth to keep the party going.

    2.Choose Your Menu

    Ask yourself this: why do people tailgate in the first place? Food, food, and food. Sure, they all want to cheer their team on at the game, but in the hours leading up to kickoff, they're focused on what's cooking. You want to put plenty of thought into your tailgating menu. Burgers and brats are always a solid choice, but you can find plenty of unique recipes outside of the classics if you're looking to change things up.

    3.Gather Your Gear

    Once you've settled on your menu, you'll need to assemble your tailgating kitchen. You want to keep two things in mind when selecting your tailgating grill: portability and power. First of all, since you'll be cooking from the parking lot, you need a stove that sets up and takes down like a dream. We're talking features like removable legs, a carry bag, and foldable side shelves. You also want to consider cooking power; you need a stove that heats up quick and can handle whatever food you want to throw on it. We've found that this tailgating stove hits the sweet spot between both of those elements.

    4. Prep the Food

    After you've gathered your ingredients and your cooking gear, you should prepare all of the food the night before. That means slicing the onions, forming the meat patties, and blending the soup all before you show up on game day. This will save you hassle at the tailgate party (have you ever tried to shape burger patties in a parking lot?), and it means the food will be ready to eat that much sooner. You also won't have to pack as much since you'll have finished all the food prep at home, which you'll be happy about at the away games.
