I cooked about 4 lbs. of beef ribs at once.
First I used rib rub and perrer on the ribs and refrigerated for 3 hours. In my Ultimate Turkey Roaster, I lined the bottom with foil (for easy cleanup), then added about 1/2 cup of pre-soaked mesquite chips.
