Warm up this Presidentâ€™s Day with a delicious Colonial Style Pot Pie recipe. Itâ€™s a snap to make and will certainly bring a huge smile at dinner time while chasing away those mid-winter blues.
- 2/3 cup 2 tbs. shortening
- 2 cups of flour
- A dash of salt
- Cut mixture with fork
- 1/2 cup of water
- Use half of mixture for bottom crust and the remaining amount for top crust
- 2 tbl. butter
- 4 tbl. flour
- 1 1/2 cups Chicken or Beef broth
- 1/2 cup evaporated milk
- 3 cups cooked vegetables (Potatoes, Carrots, Peas, Onions)
- 2 cups cooked meat (Chicken, Turkey or Beef)
- 1/4 tsp. onion salt
- 1/8 tsp. pepper
- 1/2 tsp. salt
Melt butter. Add flour and stir over low heat until blended. Add cold broth, milk and seasonings all at once. Cook, stirring constantly until mixture thickens uniformly. Stir in meat and vegetables. Pour mixture into double crust and bake at 350F for 30-45 minutes.
