This is one of my most favorite recipes to do in a Dutch oven. Not only does it look fantastic, but it is a sure crowd pleaser. This recipe is for the meat mixture inside the pumpkins. You can add whatever garnish you like. I used chopped onions and seasoning for the final meal shown in the picture. The meat will already be cooked when placed in the pumpkin so you can call it finished with the pumpkin itself is soft to your liking.
Dinner In a Pumpkin
- 2 tbsp. - Oil
- 2 1/2 tsp. - Salt
- 1 tsp. - Pepper
- 2 1/2 tbsp. - Onion, diced
- 2 tsp. - Oregano
- 2 tsp. - Garlic
- 1 tsp. - Vinegar
- 1/3 cup - Green olive, chopped
- 1 can - Tomato sauce
- 2 lbs. - Hamburger
- 1/2 cup - Ham, chopped
- 1 whole - Green pepper, chopped
- 1/2 cup - Rice, cooked
Combine all ingredients and cook until tender in a fry pan. Cut lid off a 10 inch pumpkin and clean out. Place meat mixture inside pumpkin. Place in dutch oven and cook for about an hour. Serve the meal from the pumpkin. Scooping out some of the baked pumpkin gives you a vegetable with your meal.
